Would be good to find out if it was a special variety, or just growing in pure-poo or somesuch

this stuff you are calling cardoons..looks like thistle weed we have over here.. never heard of anyone but cows eatting it though its a invasive pest here.

Cardoon is one of many species of thistle. I'd doubt it is one you have in KY though, but it is listed as invasive in California. Yours is perhaps more likely Spear Thistle (which is widely invasive in the USA).

we have that spear thistle here but we have a differant type as well dosen't get so tall and not as common. next time I see some I'll snap a picture
