find somewhere your camera can be put that captures what you want in frame.
mark the position where you have the camera (more exact here the better)
take one picture everyday for however long and make a video out of them.

Also I'd need some sort of table stuck in the middle of the lawn for 2 months

It's great that you have been able to keep it outside and see it develop over time.

Too cold and wet during the winter for something like that up here outside unfortunately without some serious winter protection.

Simba had -14C and his sailed through. Cycas revoluta is one of the few plants that are evergreen that don't seem to mind being wrapped for a month or 2.
