i took another trip up to the big plant nursery today and bought a chamaerops, it had 3 small offshoots coming off it but i wanted to keep this chammy as a single stem, so i have a little dig around to see in the off shoots had any roots but they were attached to the trunk so i snapped them off (a little bit of the fibre ripped of bottom part of the main one) but i am wondering is this ok to do or or have i damged the trunk at all ?

Well the offshoots wont survive but the main trunk should be fine. Doing this at this time of year is not ideal as the cuts could allow fungus/decay/rot into the plant.

It is ok to remove the offshoots, but as Yorkshire Kris says, wait until the Spring. Oh, and don't just snap them off - try and get a clean cut with a knife or something.
You'll probably find that they will grow back too, and will need to be cut off again. There's not much that can be done about that, its just the way that Chamaerops grow.
I think it is very rare for a Chamaerops offshoot to successfully root and grow once removed. It would be interesting to hear if anyone out there has ever managed it.
