If you are keeping any of your Fatsias in a pot overwinter the best place would be a cool frost-free greenhouse and give them an occasional water. Otherwise, placing any clear plastic or glass cover in the form of a cloche over one that has been planted will provide some protection if not quite matching a greenhouse. It depends how big (or small) your plants are.

If you have nowhere inside to keep them then another alternative is an area against a sunny south facing wall where they could be temporarily planted until the Spring.

I think it depends how big they are. If they came in 9cm pots then they need overwintering in a cold, or perhaps even a frost-free, greenhouse.

If they came in 3L pots, or bigger, and are knee-high plants then I think they will be fine planted out. Put some plastic sheet, or fine netting (something like a net curtain) on the side that any cold wind is coming from to give them some protection.
